With all this hot weather, I have been keeping cool with making ice cream. Last week, I made a batch of Blueberry Cheesecake icecream. Found a new recipe for Chocolate Three-Spice ice cream that uses cardamom, cinnamon, and nutmeg. Yummy! Just made a batch of Key Lime with Graham Cracker Gelato. Didn't have key limes, so used regular and had all the other ingredients. Can't wait to put into my ice cream maker this evening for a great treat. Will make Double Chocolate ice cream tomorrow. All of these are low-fat since I use 2% milk instead of whole milk and half and half instead of heavy cream. They still come out great.
I love using fresh local produce in summer. I had some corn on the cob that I needed to use and Epicurious had a great and easy recipe for Tagliatelle with Fresh Corn Pesto. Didn't have any tagliatelle, so I used linguine. Also, increased the amount of basil (fresh from my garden). It was a refreshing dish served with a caprese salad (again more basil from my garden) and a glass of white wine from Lockwood winery. Perfect way to end a hectic day.
